Cinnamon Toast Ice Cream Sandwiches
4 egg yolks
100g sugar
240ml milk
240ml cream
2g grated nutmeg
Cinnamon Butter
2 tbsp butter
1 tbsp light soft brown sugar
1/2 tsp cinnamon
1/8 tsp salt
2 slices of toast
4 tbsp Banana & Chocolate Jam
1. In a saucepan, bring the milk, cream and fresh nutmeg to the boil over a medium heat.
2. In a bowl, whisk together the egg yolks and sugar. Slowly pour the mixture into the egg yolks, whisking continuously, then pour back into the saucepan.
3. Stir continuously over a low heat with a spatula until it has thickened slightly. It should be able to lightly coat the back of the spatula. Pass the mixture through a fine sieve and chill in the refrigerator. Pour mixture into ice cream maker and follow manufacturer's instructions.
4. For the cinnamon butter, just mix all of the ingredients together and spread on the toast while warm. Let the toast cool before adding the Banana & Chocolate Jam and 2 scoops of nutmeg ice cream and sandwiching together.
