Coconut Chai Topping
100g flaked coconut
85g honey
55g light brown sugar
120g butter
A pinch of salt


Cake
2 eggs 
150g sugar
110ml veg oil
1 tsp vanilla extract
120g Greek yoghurt
60ml milk
180g plain flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp cardamom
1 tsp ground ginger
1 tsp coarse black pepper
1/4 tsp ground cloves
A pinch of salt

Custard
125ml double cream
250ml milk
3 egg yolks

25g caster sugar

65g Banana & Chocolate Jam

A pinch of salt

Serves 8

Crunchy caramelized coconut topping atop a warm chai flavoured sponge cake served with Banana & Chocolate flavoured custard. Perfect for the upcoming fall.
