120ml milk
2 eggs
1 tbsp sugar
1/2 tsp salt
1 tsp vanilla extract
2 tbsp butter

Strawberry Balsamic Jam

Flaked almonds, toasted

Icing sugarm for dusting

Star Anise Pears

2 large pears

1 tsp honey

1 tbsp lemon juice

A pinch of star anise powder

Tarragon Ice Cream

200ml milk

400ml cream

6 egg yolks

150g sugar

40g tarragon, picked

Serves 4

The Dutch baby pancake is a sweet oven baked pancake that is airy, fluffy and absolutely scrumptious. Topped with juicy, marinated star anise pears, crunchy flaked almonds and Strawberry Balsamic Jam, it’s a textural and flavour explosion in every bite! And to top it all off, homemade tarragon ice cream that adds a subtle, herby freshness to the dish.
