Earl Grey Snowflake Cake

1. Preheat your oven to 170°C.  
2. Prepare snowflake cake pan with baking spray and use a pastry brush to evenly coat the grooves of the pan. Sift over the flour, moving the pan around to coat it evenly, then tap it while inverted to remove any excess flour. Set aside 
3. Using a stand mixer, beat together the butter and sugar until pale and fluffy. Add the eggs in one by one, making sure to beat well after each addition.  
4. Beat in the flour, baking powder, salt and earl grey tea leaves on a low speed until just combined. Slowly add in the brewed tea and cream.  
5. Transfer the mixture to the prepared cake pan 
6. Gently tap on the counter a few times to remove any air bubbles. Bake for 40-45 minutes. Cool in the cake pan for 10 minutes before inverting onto a cooling rack. Cool cake completely before dusting with icing sugar. 
7. For the cream, place the jam into a medium bowl. Blend the jam using a stick blender, then add the cream and whisk together until stiff peaks form.
