2 English muffins, split and toasted

2 eggs

2 slices of gouda cheese

3-4 tsp Spiced Pineapple Jam

2 small handfuls of fresh rocket leaves

½ tsp red chili flakes (adjust to taste)

1. Toast all 4 muffin halves until golden brown. Set aside.

2. Heat a pan with a bit of oil over a mediu m heat. Cook the eggs to your preferred doneness. Season each with salt.

3. To assemble, spread the Spiced Pineapple Jam on each half of the English muffins. Add the cheese slices to 2 of the halves and put under the grill until the cheese has melted. Add the fried eggs then spinkle with your desired amount of chilli flakes. Add your handfuls or rocket leaves and top off with the jammy muffin tops.
