Egg, Tarragon and Pumpkin Jam Tartine

1. In a frying pam heat the oil over a medium heat. Crack in the eggs and cook until the whites are set and edges turn golden crisp, about 2-3 minutes. Season with salt and pepper then drain onto a tray lined with kitchen towel to absorb the oil.

2. To assemble, toast your brown bloomer and spread with Spiced Pumpkin Jam. Place the fried egg on top and sprinkle with pine nuts and tarragon leaves before serving.
