Fiadone Cheesecake with Orange & Date Salad

500g ricotta cheese  
120g sugar 
4 eggs 
Zest of 1 lemon 
2 tsp limoncello  Icing sugar, for dusting 

2 tbsp pine nuts, roasted 
 
Orange Salad 
3 oranges, peeled, halved and cut into 5mm slices 
80g pitted dates 
1/2 lemon juice 
1 tbsp Peach & Passionfruit Jam 

Serves 12

A traditional French cheesecake from the island of Corsica made from brocciu or ricotta cheese and has an airy texture and citrus sweet taste served with an orange and date salad enhanced with Peach & Passionfruit Jam to create a sweet and refreshing summer dessert.
