200g caster sugar

30g butter, melted

1 egg

2 tbsp Apricot & Nutmeg Jam

250ml milk

1 tbsp vinegar (white or apple cider)

1tsp vanilla extract

125g plain flour

1 tsp soda bicarbonate

1/2 tsp salt

Sauce

250ml double cream

100g caster sugar

115g butter

125ml hot water

Serves 8

Malva Pudding! A classic South African dessert consisting of a rich sponge cake made with Apricot & Nutmeg Jam that is drenched in a beautiful bath of creamy, buttery sauce while it is still warm, ensuring that the cake is super moist and flavourful. It has a caramelized texture and a moist, sweet flavour and is often served with custard, ice cream or whipped cream.
