Peanut Butter and Jam Popcorn
2 tbsp coconut oil
60g popcorn kernels
4 tbsp Banana & Chocolate Jam
4 tbsp crunchy peanut butter
1. Preheat the oven to 100°C. Heat the oil in a thick based saucepan on a medium high heat. Get the oil hot then add the popcorn kernels and shake the pan so the kernels form a single layers on the bottom. Place the lid on the pan and reduce the heat to medium. Once the kernels start popping, shake the pan every so often and listen to the pace of the popping. The kernels should pop rapidly and continue as one long continuous burst. As soon as the popping slows down to a few kernels at a time, turn off the heat. Nearly all of the kernels should be popped.
2. Mix together the peanut butter and the jam in a small saucepan on a high heat for 1 minute. Allow to cool for a few minutes before mixing into the popcorn. Incorporate with your hands to evenly coat the popcorn.
3. Transfer to a lined baking tray and spread out.evenly. Bake for 15 min. Take out and leave to cool before serving.
Serves 6-8
Freshly popped homemade corn kernels mixed in with a fine coating of crunchy peanut butter and Banana & Chocolate Jam. A nice switch up from the norm.
