Red Fruit Salad
500g watermelon, diced into 1-inch pieces
200g strawberries, hulled and halved
200g raspberries
200g cherries, pitted and halved
Seeds of 1/2 pomegranate
1 Elderflower head
Peach, Passionfruit and Lime Vinaigrette
30ml white wine vinegar
90ml veg oil
2 tbsp Peach & Passionfruit Jam
Finely grated zest of 1 lime

A visually stunning salad that combines watermelon, strawberries, raspberries, cherries and pomegranate garnished with floral elderflower and dressed in a tart Peach, Passionfruit and Lime Vinaigrette to balance the sweetness and give a juicy and refreshing salad perfect for a hot day.
