Spiced Pineapple Jam Cake with Lime Glaze

1. Preheat your oven to 180°C. Grease and line a 9-inch round cake tin with greaseproof paper.

2. In a stand mixer, beat the butter and sugar together until pale and fluffy.

3. Add eggs, one at a time, beating after each.

4. Mix in creme friache, vanilla, lime zest and Spiced Pineapple Jam.

​5. Add in the plain flour, baking powder, soda bicarbonate and salt and mix in until fully incorporated.

6. Pour batter into prepared cake tin, smooth the surface and bake for 30-35 minutes or until a toothpick comes out clean. Cool in the pan for 10 minutes, then turn out onto a wire rack to cool fully.

7. For the lime glaze, sift the icing sugar into a small bowl. Add lime juice and zest and whisk until smooth.​

8. Brush over completely cooled cake. Scatter over elderflower petals and let sit 15 mins to set before serving.
