Spiced Pineapple Jam Cake with Lime Glaze

115g butter, softened
150g sugar
2 eggs
120ml creme friache or plain yogurt
1 tsp vanilla extract
120g Spiced Pineapple Jam
Zest of 1 lime
190g plain flour
1 tsp baking powder
½ tsp soda bicarbonate
¼ tsp salt
1 elderflower head
Lime Glaze
100g icing sugar
3 tbsp lime juice (45ml)
1/2 lime zest
Serves 12
Soft, sweet and bursting with tropical vibes, this cake is swirled with Spcied Pineapple Jam and topped with a light zingy lime glaze that adds the perfect citrus finish. Moist, refreshing, picnic-perfect and even better the next day.
