Teurgoule

125g pudding rice
60g light brown sugar
60g caster sugar
1 tsp cinnamon
1 vanilla pod, split
1250ml milk
75ml double cream
Serves 6
Teurgoule; a slow-cooked rice pudding that is a specialty of Normandy. During this time the rice absorbs the milk and sugar, becoming tender, sweet and creamy, while a crust forms on top, giving it a caramelized flavour. It is served it up with Apricot Nutmeg Jam and slices of brioche and can be served warm or cold.
