Silken Tofu Chocolate Mousse

1.Use a microwave or double boiler to gently melt the chocolate until smooth. Let it cool slightly.

2. In a blender or food processor, combine the tofu, melted chocolate, maple syrup, vanilla, and a pinch of salt. Blend until completely smooth and creamy, making sure to scrape down the sides as needed.

3. Spoon the mousse into serving dishes and chill in the fridge for at least 1 hour or overnight to firm up.

4. Add Apricot & Nutmeg Jam, cocoa nibs and walnuts and enjoy.
