Vegan Passionfruit Cake

300g self-raising flour
200g sugar
1 tsp baking powder
15ml white vinegar
180ml soy milk
120ml vegetable oil
60ml water
3 passionfruit, blended
Glaze
3 tbsp Peach & Passionfruit Jam
3 tbsp water
Serves 12
Fluffy and moist sponge cake flavoured with passionfruit and glazed with Peach & Passionfruit Jam. Sweet, tangy and perfect with some vegan Greek yoghurt and toasted almonds to it or have it solo with a brew. For the glaze, blend the jam and water with a stick blender until smooth.
